Chapter 01 · 1,900 metres

Altitude

Finca La Vereda sits on the eastern shoulder of the Cordillera, where mornings arrive cold and the fog lingers until ten. Up here a coffee cherry ripens slowly, and slowness is the whole point.

Chapter 02 · Late April

Harvest

Only the deep-red cherries come off the branch. Pickers pass each tree five or six times across the season, filling baskets by hand because a machine cannot tell ripe from nearly.

By dusk, the day's harvest is floated. What sinks is sorted again. What floats is sold to someone else.

Chapter 03 · 38 hours

Fermentation

Depulped, the beans rest in open concrete tanks still wearing a coat of fruit sugar. Native yeasts go to work. The air smells like cider and bread dough.

Thirty-eight hours is where this lot lands: long enough for stone fruit, short enough to stay clean.

Chapter 04 · 18 days

Drying

Raised beds of woven mesh, turned by hand every two hours so no bean stays in shadow. On cloudy days the covers come off; at noon they go back on.

From 55 percent moisture to 11. Patience, measured with a probe.

Chapter 05 · 11 minutes

Roasting

Green coffee goes in at 190 degrees and the drum starts to sing. First crack at nine minutes, like popcorn behind a wall. We pull this lot ninety seconds later.

Medium

Slide to shift the whole page's colour temperature. Lighter roasts keep more of the fruit; darker ones trade it for body and cocoa.

Chapter 06 · Four ways in

Brewing

Same lot, four methods. Scroll sideways to taste the difference.

Method 1 of 4

Pour-over

Ratio
1 : 16
Time
3:15
Water
94 °C

Clear, floral, tea-like. The honey process shows up as apricot on a long finish.

Method 2 of 4

Espresso

Ratio
1 : 2.2
Time
0:29
Water
92 °C

Pulled a touch long, the acidity rounds into caramelised plum and cocoa.

Method 3 of 4

Immersion

Ratio
1 : 15
Time
4:30
Water
93 °C

A heavier cup. Brown sugar and dried fig, with a soft sage-leaf lift.

Method 4 of 4

Cold brew

Ratio
1 : 8
Time
14 h
Water
4 °C

Slow and sweet. Think black tea with cherry syrup, served over ice.
